I have been busy the past week baking up a storm this week to have items to donate to the school bakesale, as well as cookies to gift to neighbours and treats for us to enjoy at home over the Christmas Holidays.

I decided to keep things simple this year and chose drop cookies that didn’t require any rolling, cutting, or detailed icing work.  I had a hard time narrowing it down, but I think I came up with a selection of festive cookies that both taste great and look nice together on a cookie tray.

Below are all the great recipes I used.  We’re going to have a hard time picking just a couple to leave out for Santa on Christmas Eve!

Gingersnaps

A family favourite, I have made this Chewy Gingersnaps recipe for many years and they are a must have on all my cookie trays.  They are soft and chewy with the perfect amount of spice, and they can be dressed up or down with colored sugar, sprinkles and icing.

Grinch Cookies

When I saw these Grinch Cookies from The Recipe Critic I knew they were sure to be a hit with the kids.  The vibrant green dough and red and white colored M&M candies make for such a fun and festive looking cookie!

Eggnog Snickerdoodles

I love eggnog during the holiday season so I knew it would be great in cookie form.  Snickerdoodle’s are not something I normally make, so I thought Eggnog Snickerdoodle spin from Lil’ Luna would be a great new recipe to try.  The eggnog glaze is delicious and even the non-eggnog fans in my house like these cookies!

Buttertart Pinwheels

Buttertarts are another of my holiday favorites and I think these Buttertart Pinwheels from the Food Network might now be my new favorite Christmas “cookie”.  (Sorry gingersnaps) I chose them because the ingredient list was short and I thought the more cookie-like form would work well on a cookie plate.  They were super easy to make with pre-made puff pastry, and definitely give that Buttertart taste and feel.  My only change was to substitute a few extra raisins for the chopped pecans to keep them nut free for the bake sale.

Double Chocolate Peppermint Cookies

Nothing says Christmas like candy cane, so I knew I had to find something that incorporated that familiar minty flavor.  I also love chocolate, so these Double Chocolate Peppermint Cookies from a Pumpkin & a Princess seemed like the perfect cocoa-filled treat to add to the mix.  I finished mine off with a drizzle of chocolate ganache, sprinkles and some extra crushed candy cane.

Blizzard Cookies

I have a pantry shelf full of Christmas sprinkles/decorations that I haven’t quite figured out what to use on, so I was excited to come across these Blizzard Cookies from Sugar Spun Run.  Dotted with the blue and white snowflakes and white chocolate chips, I like that they are a departure from the traditional red and green colors of Christmas.

Cherry Angel Food Cookies

I LOVE maraschino cherries so I was excited for these Cherry Angel Food Cookies from My Table For Eight {By Jen}.  The ingredient list is super simple and they baked up light and soft like angel food cake.  The only change I might make is to add a bit of almond extract – almond and cherry are such a great combo!

Once everything was baked, cooled and decorated, I put the batches of cookies into XL Ziploc freezer bags to be frozen.  They are now all ready to go onto trays or into tins as needed throughout the holiday season.

For the bake sale, I plan to send in plates of assorted cookies along with small bags of my Chocolate Candy Cane Pretzels.  To plate my cookies, I found inexpensive plastic Dinner plates from Dollar Tree and cellophane Treat Tray Bags at Bulk Barn.

I can’t wait to see what other delicious treats everyone else has baked up!  Hopefully it all sells well and we are able to raise a good amount to donate to the kids charity of choice – the Make a Wish Foundation.
